Apple-Carrot Salad



Planning a festive and colorful Christmas table can be easy with this healthy salad.  It is light, which many of your guests will appreciate, plus flavorful. This would be a perfect side with the leftover ham or turkey sandwiches.

Apple-Carrot Salad

Yield: 4-6 servings

Ingredients:
3 large carrots, peeled and shredded
2 medium Granny Smith apples, shredded
3 tablespoons pistachio nuts, roughly chopped
1 tablespoon honey or blue agave nectar
Juice of one large, fresh lemon
A twist of coarsely ground black pepper (optional)

Directions:
Combine all ingredients in a large salad bowl and gently toss. Serve chilled.

  2. Pam - This was quite good, although I needed to add salt. Next time I might grate one-half of the apples then finely dice the other half for more apple texture. Enjoy!
